Onion Sprouts, Beet Seeding and The Egg and I

Just a few weeks have passed since our last seeding project, but already there are signs of new life at Restoration Farm as preparations are moving full tilt toward the 2012 growing season.

Fresh green sprouts of Gladstone Onions – seeded by me – are poking out of the loamy soil in the greenhouse.


We spend a crisp Sunday morning on the cusp of Spring seeding stacks of additional flats that will serve as the “birthplace” for Red Ace Beets, Touchstone Gold Beets, and Deep Purple Scallions.


The heritage chicks that arrived a few weeks ago have quickly become gangly teenagers, and outgrown their original brooder.

There is a flurry of adolescent activity when their breakfast of chickweed is served.

Outside, Head Grower Caroline Fanning peeks into the hen house. She emerges with a perfect brown egg, which she puts into my hand. It is still warm, and perhaps the freshest egg I’ve ever held.

There’s no chance I’m putting this new egg in the refrigerator. There’s a better way to celebrate this little life moment offered by Restoration Farm.





What a simply perfect, farm fresh lunch!

  1. I've never held a fresh egg. I can't get over the vivid color of the yolk. Wow. No egg yolk from the supermarket would ever have that depth of color.

  3. Oh, that brought back a memory of when I held a newly laid warm egg in my hand, thanks for reminding me, such a wonderful memory and feeling.
    It is so rewarding to see what you plant come up. I transplanted some little seedlings yesterday into a little bigger starter cup.

  5. I've never tasted fresh eggs, but I hear they are wonderful. So happy to hear you're going to try some gardening at home. I have some onion sprouts growing in my brother-in-law's greenhouse.

  6. So far my farm eggs have been brilliant, blue and although not quite that fresh... very near. It is a miracle to eat that well, isn't it?? I will be away and eating badly for weeks... I will miss this great food.

  7. This egg look perfect!! and yumm! you know sometimes we have fresh eggs from the farms close here and are absolutely nice always amazing me the color and tasty!

  8. There is NOTHING like a fresh egg (I've learned since my dad started raising chickens). Did you know that supermarket eggs are at least three weeks old?

    And now that I've (sort-of) mastered the honey wheat recipe - I made two loaves today - maybe I'll have to try that wonderful looking multi-grain that's in your last shot!

  9. Oh my, doesn't that look like sheer heaven on a plate? The yolks of fresh eggs are so bright in color, too.
    Restoration Farm is well on its way this spring. What fun to see your hard work begin to sprout!

    "Your" onions are growing quite nicely. I'm so proud of you:)

    And that warm fresh egg, oh my goodness, did you ever "lay" your eyes on such perfection. A perfect way to celebrate it.

    May I suggest a Pound Cake next. You would not believe the golden goodness fresh eggs breathe into a home made pound cake. Amazing! (Farnsworth would agree:)
