I grew up in North Alabama, and the BBQ is not cooked in any sauce there. (it's juicy but plain, and you then add your own sauce/mayo/slaw. Or it's served on a baked potato with toppings) Then I moved to South Alabama and was shocked to get meat cooked in this red spicy sauce.
